Luscious Lemon Bars

Summary: Lemon bars are a wonderfully easy, and tasty, desert that can be appropriate for any occasion. Try this recipe next time you are in the mood for a citrus dessert.

Lemon bars seem to always be a hit at any bake sale, or dinner party. Here is a recipe that takes all of about 30 minutes to finish, and that will be a great hit at your next event.

Ingredients and materials needed:

  • 1 package lemon cake mix
  • 1/3 cup softened butter
  • 3 eggs
  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 teaspoons grated lemon peel
  • 1/4 cup lemon juice
  • Powdered sugar if desired (adds a wonderful touch)
  • 2 Mixing bowls
  • Cake pan (13 x 9 x 2)
  • Whisk

While mixing the cake mix, butter and 1 egg into your mixing bowl, pre-heat the oven to 350 degrees. When mixing the cake mixture, keep 1 cup of this mixture in a reserve, you are going to need this later for the "crust". Press the remaining mixture lightly into the ungreased pan and then bake for about 10 minutes, or until a light golden brown.

As you are baking that bottom crust, you need to take the remaining 2 eggs, the granulated sugar, salt, baking powder, and the lemon peel and lemon juice. Mix all of this in the second mixing bowl that you had set aside until it takes a light and foamy texture.

By the time you have achieved that texture, the cake mix should be done in the oven. Remove the hot crust from the oven, and pour the new mixture over the hot crust. This is going to become the main part of the lemon bars. Sprinkle the top crust mix and place everything back into the oven. Allow this to cook for about 18 to 20 minutes or until a light golden brown and firmly set.

Finally, remove the bars from the oven, and sprinkle with powdered sugar. Allow the bars to cool to room temperature, and then cut into bars that are 2 x 1-3/4 inches in dimension. This should produce about 30 bars. Serve and enjoy.
