Savory Chicken Oriental Salad

Summary: Chicken salad is an abiding favorite of many. Here is a wonderfully different way of preparing and serving your chicken salads. This is a perfect recipe for when you are in the mood for oriental, or when you are looking for an easy meal to serve at a party.

There are times those times when you are in the mood for lighter fare. One of the things that are perfect for when you want the lighter side of meals is a chicken salad. There are times though that just plain old chicken won't cut it, in those instances a great way to spice it up a notch is to go the route of the orient. So, try this wonderful recipe for an oriental chicken salad.

Salad Ingredients:

  • 2 cups of cooked diced chicken
  • 2 cups of red cabbage
  • 2 cups of green cabbage
  • 1 package broken chicken flavored ramen noodles
  • 4 green onions
  • 2 tablespoons sesame seeds
  • 1/2 cup slivered almonds

Dressing Ingredients:

  • 1/4 cup vinegar
  • 1/4 cup oil
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • Flavor package from ramen noodles

Begin by combining the chicken, cabbage and green onions in a large salad bowl, and set aside. Take those broken ramen noodles and place them into a colander and pour about 2 cups of boiling water over the noodles so that they become softened to the touch. Once these noodles have cooled you can go ahead and add them to the cabbage salad that was mixed earlier. You are now ready to mix your salad dressing.

Mix all of your dressing ingredients together in a small bowl. Mix them together using a small wire whisk. The consistency should be something along the lines of a vinagerette dressing. Once you have achieved that consistency, simply pour it over the salad, and toss it together. After you have mixed them together, add sesame seeds to taste.

Place the salad into a refrigerator to cool for a minimum of three hours, but no longer than overnight. The longer that you allow the salad to chill, the more intense the flavor becomes. When you are ready to serve the meal, remove the salad from the refrigerator, and add the almonds.

As stated earlier, this meal is perfect for light meals. This is also a great for showers or parties. Feel free to increase the number of ingredients to accommodate the number of people that you are planning to serve. One of the more common ways to do this is simply by doubling the amount of noodles and dressing.
