It just seems that mashed potatoes go perfectly with Roast, and making the perfect mashed potatoes is really one of the simplest foods to make. With this recipe you will find your family and friends wanting more of the old fashioned tasting mashed potatoes.

Start out by taking out a potato for each person and one extra for the pot. Start peeling the potatoes, after peeling the potato places them into a bowl of water. Put the potato shavings into the thrash. If it is going to be awhile before cooking the potatoes , then put them in a pot covered in water with a little salt about ½ teaspoon for every two quarts of water to help keep the potatoes from turning brown. Usually I like to keep the potatoes in water when I have peel and prepare the potatoes early. Potatoes are easy to prepare ahead of time and can be put aside till later. If you are going to be crunched for time when it is time to actually make the whole dinner, then save yourself some stress and time by peeling the potatoes beforehand.

When you are ready to actually start cooking the potatoes, fill a pot about two-thirds of the way with water (or pour out some water if you soaked your potatoes before). Cut the potatoes into smaller pieces. The potatoes cook faster and retain the taste better. Cook the potatoes in boiling water. Keep checking the potatoes to see how soft they are: when they are soft enough to easily poke with a fork, or you can cut them with a spoon. After the potatoes are cooked remove them from the stove and drain the water.

Place the potatoes in the mixer and mash them a bit with the beaters. Add in some butter when you are mashing the potatoes and a bit of milk to make the mashed potatoes fluffy. The amount of milk and butter is usually best determined by taste.

Keep mixing, but don't over mix the potatoes too much because then you will probably just make them too runny. Taste them while you are in the process of mashing the potatoes to make sure that there is enough butter and milk in them, you want them to taste just right.
