Glazed Ham with German Potato Salad and Creamed Peas

Summary: Keep your ham moist by glazing it often. Prevent the glaze from burning by turning the oven heat down a little during the last 10 minutes of baking. If your dinner crowd is still hungry after eating this menu, serve up a quick dessert of prepackaged brownies topped with vanilla ice cream and chocolate sauce.

The first time I tried this recipe, I didn't realize that there was a protective paper wrap on the ham, in addition to the plastic wrapper that contained the label. Halfway through cooking the ham, I noticed that the paper wrap was coming loose from the ham end, and removed it promptly. I learned that day to always look for the paper wrap and remove it before cooking.

Glazed Ham Ingredients

  • 1 fully cooked boneless ham
  • 1 cup of packed brown sugar
  • 4 tablespoons of light corn syrup
  • 2 teaspoons of honey Dijon mustard

Glazed Ham Directions

Preheat your oven to 325 degrees. Prepare a large baking pan by lining it with aluminum foil, and then spraying it with non-stick cooking spray. Remove the plastic wrap from the ham, and then remove the membrane from the ham. Place the ham into the pan and bake uncovered for about 1-1/2 hours. While the ham bakes, prepare the glaze by placing the sugar, corn syrup, and mustard into a saucepan on the stovetop. Cook over low heat. Remove the ham from the oven after 45 minutes and glaze it with a pastry brush. Continue to glaze the ham every 10 minutes. Allow the ham to rest for at least 15 minutes before serving.

German Potato Salad Ingredients

  • 1/3 cup of cider vinegar
  • 1/3 cup of water
  • 2 tablespoons of flour
  • 2 tablespoons of sugar
  • 1 chopped onion
  • 6 slices of bacon
  • 6 potatoes

German Potato Salad Directions

Wash and peel the potatoes, and then slice them into 1/2-inch slices. Place the potatoes into a pot of boiling water and boil just until they are tender. Remove from heat and immediately drain and rinse them under cold running water. Place the potatoes into a covered casserole dish. In a large skillet, fry the onion until it is very crisp. Remove the bacon and crumble into a small bowl. In the bacon fat, saute the onion until it is tender. Add the flour and stir, and then slowly add the water and vinegar. Stir until the sauce thickens. Add the bacon crumbles back into the skillet and thoroughly heat the mixture. Pour the sauce over the hot potatoes and stir briskly. Cover and place into the microwave oven for 5 minutes and serve hot.

Creamed Peas Ingredients

  • 1 tablespoon of flour
  • 1/2 cup of milk
  • 1 tablespoon of margarine
  • 2 teaspoons of sugar
  • 1 package of frozen peas

Creamed Peas Directions

Cook the peas according to the directions on the package either on the stovetop or in the microwave. Cook until tender, but not mushy. Make your white sauce while the peas cook by melting the margarine in a saucepan over low heat. Blend in the flour and then gradually add the sugar and milk. Boil the mixture for 2 minutes while stirring constantly until the sauce thickens. Immediately remove from heat and pour over the drained peas. Serve immediately.
