Turkey Breast with Green Bean Casserole and Noodles Alfredo

Summary: While you could garnish this meal with a can of cranberry sauce, forego the temptation to make a copycat Thanksgiving dinner. Instead, choose to place a platter of finger foods such as cheese cubes, olives, and bread-and-butter pickles, or fry a batch of skillet scones and serve with honey butter or jam.

Green bean casserole with French-fried onions is not only a dish reserved for Thanksgiving dinner. I make a batch every weekend and we reheat them in the microwave several times during the week as a side dish at dinnertime.

Turkey Breast Ingredients

  • 6 pounds of turkey breast
  • 2 packages of dry onion soup mix
  • 1/2 teaspoon prepared minced garlic
  • 1/2 stick of margarine
  • 1 can cream of mushroom soup
  • 1/2 cup of milk

Turkey Breast Directions

Wash the turkey breast and place inside of your large crock pot. Open one package of soup mix and sprinkle on top of the turkey. Turn the turkey over several times to coat the breasts with the dry soup mix. Add the minced garlic and then cut the margarine into tiny pieces and add to the pot. Cover and cook on high for 1 hour. Turn the turkey breasts over, cover and cook for 6 hours.

Green Bean Casserole Ingredients

  • 3 cans of green beans
  • 1 can cream of mushroom soup
  • 3/4 cup of milk
  • 1 container of French-fried onions

Green Bean Casserole Directions

Preheat your oven to 350 degrees and prepare a 2-quart casserole dish by spraying it with non-stick cooking spray. Open the cans of green beans, drain them into a colander, and then place them into a large bowl. Dump the soup into a bowl along with the milk and whisk them until smooth. Pour the soup mixture over the green beans and mix thoroughly. Place the mixture into the prepared casserole dish and bake for 45 minutes. Remove the casserole from the oven and top with French-fried onions. Return to the oven for an additional 10 minutes.

Noodles Alfredo Ingredients

  • 1 stick of margarine
  • 1/2 cup of grated Parmesan cheese
  • 1/2 cup of shredded mozzarella cheese
  • 1/2 cup of heavy whipping cream
  • 1 8-ounce package of wide egg noodles

Noodles Alfredo Directions

Melt the margarine over low heat and add the cream. Stir in both cheeses until the contents are thoroughly mixed and melted. Cover and reduce the heat to the lowest setting to keep warm. Cook the egg noodles according to the package directions and drain. Return the noodles to the pot and pour the Alfredo sauce over them and gently mix. Serve immediately.
