Swedish Meatballs and Egg Noodles with Creamed Spinach and Hot Applesauce

Summary: Instead of using frozen meatballs, you can use fresh ground beef to form your meatballs. Simply use a binding agent, such as eggs and breadcrumbs, and any spices you want to incorporate for flavor, and then fry them in a deep skillet over medium heat until they are done. Make sure that you drain the grease away before continuing with the remainder of the recipe.

Boil your egg noodles to the Al dente stage when serving with a sauce or protein. Al dente means that the noodles will be cooked, yet still a little firm. When you serve them, placing hot ingredients atop them, they will continue to cook, serving the perfect base for the meatballs and sauce.

Swedish Meatballs with Egg Noodles Ingredients

  • 1 jar or can of beef gravy
  • 1 can of cream of mushroom soup
  • 1 soup can full of milk
  • 1 small container of sour cream
  • 1 large bag of wide egg noodles
  • 1 large bag of frozen meatballs

Swedish Meatballs with Egg Noodles Directions

Cook the egg noodles according to the package directions, drain away the water, and then turn them out into a serving bowl. You may want to add a pat of margarine and then toss the noodles so they won't stick together. Place a lid or plate over the bowl and set them aside to keep warm. Using a large pot, open the soup and gravy and pour them inside, along with a soup can full of milk. Heat them on your stovetop on medium heat and stir until well blended. Add the package of meatballs, stir to coat them, and cook on medium-high heat for about 30 minutes, or until the meatballs are heated throughout. Reduce the heat to medium-low and stir in the sour cream. Cover the pot and cook for about 15 minutes. Serve over warm egg noodles.

Creamed Spinach Ingredients

  • 2 tablespoons of flour
  • 1 cup of heavy whipping cream
  • 1 tablespoon of dried onion flakes
  • 2 boxes of frozen spinach

Creamed Spinach Directions

Open both boxes of spinach and place them into a microwave-safe dish. Add 1/2 cup of water and a pinch of salt. Cook on high heat for about 6 minutes, or until the spinach is hot. Drain the spinach into a colander and set aside. In a large pan on your stovetop, heat the cream over medium heat and then gradually add the flour. Stir with a wire whisk until the mixture is smooth, increase the heat to high, bring to a boil and cook until thickened. Reduce the heat to medium-low, add the spinach and cook for about 30 minutes, stirring occasionally. Serve hot.

Hot Applesauce Ingredients

  • 1 large jar or can of applesauce
  • 2 tablespoons of margarine
  • 4 teaspoons of sugar
  • 1 teaspoon of cinnamon

Hot Applesauce Directions

Open the applesauce and dump it into a pan on your stovetop. Heat over medium heat and cook for about 15 minutes. Add the margarine and heat an additional 10 minutes, or until the applesauce is very hot. While the applesauce is cooking, combine the sugar and cinnamon into a tiny bowl. Remove the applesauce from the stovetop, place into a serving dish, stir in the sugar and cinnamon, and serve immediately.
