Honey Mustard Chicken with Oven Roasted Potatoes and Easy Peach Cobbler

Summary: Years ago I worked as a cook in a children's home, and the dietician provided me this recipe for peach cobbler. It is one of the easiest desserts to cook, yet it comes out perfect every time. The key ingredient for the perfect crust is the self-rising flour. Add the sugar just as the crust begins to brown and then continue to cook until the crust top is a deep brown.

Oven roasted potatoes are simply delicious. The key to making them crunchy is to cook them at a high temperature, and turn them often to brown them, while still retaining the moisture inside.

Honey Mustard Chicken Ingredients

  • 1/4 cup of orange juice
  • 4 tablespoons of honey
  • 1/2 cup of Dijon mustard
  • 3/4 cup of water
  • 1/2 onion
  • 6 boneless skinless chicken breasts
  • 1 tablespoon of vegetable oil

Peel the onion and cut it in half. Chop one half of the onion and refrigerate the other half. In a large skillet, heat the vegetable oil over medium heat. Place the chicken breasts in the skillet along with the chopped onion. Cook until the onion is no longer crisp and then increase the heat to medium-high and fry the chicken on both sides until it is slightly browned. Turn the heat down to low and cover the skillet. In a mixing bowl, combine the remaining ingredients and whisk together until well blended. Pour the sauce over the chicken, cover the skillet and allow the mixture to simmer for about 8 minutes. Remove the cover and cook for an additional 20 minutes, turning the chicken every 5 minutes. Check that the chicken is cooked by cutting into the middle of the largest breast to see that it's done. Serve hot.

Oven Roasted Potatoes Ingredients

  • 8 red potatoes
  • 1/4 cup of vegetable oil
  • 1 tablespoon of seasoned salt
  • 1 large Ziploc bag
  • 3 tablespoons of Mrs. Dash Original Blend

Oven Roasted Potatoes Directions

Preheat your oven to 450 degrees and find a large baking dish to use. Put the oil into the Ziploc bag. Wash the potatoes, but do not peel them. Dry the potatoes with paper towels and then quarter them into the Ziploc bag with the oil. Add the seasoned salt and Mrs. Dash to the bag, seal it, and shake it four times. Allow the bag to sit on the kitchen counter for about 3 minutes, and then shake it again. Repeat the sit-and-shake process several times. Turn the seasoned potatoes out into the pan and bake for 30 minutes, turning the potatoes every 10 minutes. Bake until the potatoes are crisp on the outside.

Easy Peach Cobbler Ingredients

  • 2 29-ounce cans of peaches
  • 2 cups of milk
  • 2 cups of self-rising flour
  • 1/4 cup of sugar

Easy Peach Cobbler Directions

Preheat your oven to 350 degrees and prepare a large baking pan by spraying it with non-stick cooking spray. Open the cans of peaches and drain away the juice. Turn the peaches out into the baking pan. In a large mixing bowl, combine the milk and flour with a wire whisk until the mixture is smooth with no lumps. Pour the mixture over the peaches. Bake in the oven for 40 minutes and then check the crust. When it starts to brown, remove the cobbler from the oven and sprinkle the sugar over the top. Return to the oven and bake an additional 5 minutes.
