Baked Pork Chops with Cabbage n' Apples and Boiled Potatoes

Summary: While a side dish of plain boiled potatoes might sound boring, you can make sure that everyone has a topping that they might enjoy. Choose to place any of the following on the table as potato toppings: fresh ground pepper, sour cream, bacon bits, chives, gravy from the baked pork chops, butter, shredded cheese, green onion, or crumbled Canadian bacon. The possibilities are many.

While you can substitute green cabbage for red when making the cabbage n' apples recipe, the red cabbage provides more color to the dish. When your dinner menu looks appealing to the people who will consume it, then your meal will actually taste better to them.

Baked Pork Chops Ingredients

  • 8 thick pork chops
  • 2 cans of cream of chicken soup
  • 1 onion
  • 2 packages of pork gravy mix
  • 2 tablespoons of vegetable oil
  • 2 cups of milk

Baked Pork Chops Directions

Preheat your oven to 350 degrees and prepare a large baking pan by spraying it with non-stick cooking spray. Peel the onion and then slice into thin slices. Add the oil to a large skillet and saute the onion on medium high for about 4 minutes, or until the onion is transparent. Add as many pork chops to the skillet as you can and brown on each side. After you've browned all of the chops, place them into your prepared baking dish, spooning the cooked onions over them. In a small bowl, combine the rest of the ingredients, whisking them until smooth. Pour the mixture over the chops and bake for 45 minutes or until the chops are very tender.

Cabbage n' Apples Ingredients

  • 1 large red cabbage head
  • 2 large apples
  • 2 tablespoons of vegetable oil
  • 1 onion
  • 2 tablespoons of water
  • 1/4 cup of brown sugar
  • 2 tablespoons of apple cider vinegar

Cabbage n' Apples Directions

With a stout knife, quarter the cabbage head, cut off the stump, and then shred the cabbage. Heat the vegetable oil in a large pan over low heat on the stovetop and add the cabbage. Peel the onion and dice it, and add to the pan with the cabbage. Increase the heat to medium and fry the mixture until the onions are nearly transparent. Meanwhile, core the apples, cut away the seeds, and chop them. Add the water and apples to the pan and gently combine. Cover the pan, reduce the heat to simmer, and cook for about 25 minutes. Add the sugar and vinegar and cook uncovered an additional 10 minutes.

Boiled Potato Ingredients

  • Several spoonfuls of sour cream
  • 8 large potatoes
  • Leftover gravy from the pork chop recipe above

Boiled Potato Directions

Fill a large pot with cold water and set it on your stovetop. Wash the potatoes, but do not peel them. Instead, quarter them and then cut into 1-inch chunks. Place them into the pot and then heat to boiling. Boil the potatoes for about 30 minutes and then test with a fork. When the potatoes are tender, drain them into a colander and then dump them into a large serving dish. Add the sour cream and gently toss with a fork. Serve the potatoes with the gravy left over from the baked pork chops recipe above.
