French Toast with Easy Baked Apples and Granola

Summary: If you need to serve brunch to a houseful of guests, this menu is perfect since some people might choose to eat one thing, and not the other. Offering three distinct dishes to your guests or family will ensure that they leave the table full and ready to face the day. Increase or decrease the amounts in each recipe according to how many people you need to feed.

The granola can easily be used as a trail mix if you're planning a family hike later in the day. Simply add more dried fruit, nuts, M&M candies, and pretzel sticks, place inside of Ziploc bags, and be on your way.

French Toast Ingredients

  • Bread
  • 4 eggs
  • 1/2 cup of milk
  • 1 teaspoon of sugar
  • 1 tablespoon of vegetable oil

French Toast Directions

Beat the eggs, milk, and sugar in a mixing bowl with a wire whisk, and then pour the mixture into a shallow pan or pie plate. Heat the oil in a large skillet on your stovetop over medium heat. Very quickly, dip one side of bread and then the other into the egg mixture and then immediately place into the skillet. Put as many pieces of dipped bread into the skillet as you can. Increase the heat to medium-high and fry each side of the bread until toasted and golden brown. Serve immediately with jam, syrup, powdered sugar, or margarine.

Easy Baked Apples Ingredients

  • 6 large apples
  • 6 tablespoons of brown sugar
  • 6 teaspoons of cinnamon
  • 6 teaspoons of margarine

Easy Baked Apples Directions

Wash the apples. Using an apple corer or a sharp knife, core the apples, taking care not to cut through the bottom or sides. Arrange the apples into a glass baking dish that will fit inside of your microwave oven. Mix the sugar and cinnamon together and spoon an equal amount into the hollowed center of each apple. Place one teaspoon of margarine on top of the sugar and cinnamon mixture. Cover the apples with an inverted plate and cook on high for 5 minutes. Test to see if the apples are tender. If not, microwave for an additional 5 minutes. Serve hot.

Granola Ingredients

  • 2 tablespoons of brown sugar
  • 1 tablespoon of vegetable oil
  • 1 teaspoon of vanilla
  • 4 cups of rolled oats
  • 1 tablespoon of honey
  • 1/3 cup of margarine

Granola Directions

Preheat your oven to 350 degrees and prepare a baking sheet by spraying it with non-stick cooking spray, and another baking sheet papered with waxed paper. Using a large skillet on your stovetop, heat the oil over medium heat and add the oats. Increase the heat to medium-high and stir-fry the oats until they brown and crisp. Spread the oats onto the papered baking sheet to cool. Meanwhile, using the same pan, melt the margarine over medium-high heat, add the rest of the ingredients, stir constantly, and cook until the mixture is hot and bubbly. Add the oats back into the pan, combine well, and cook for an additional 5 minutes. Pour the granola onto your prepared baking sheet, spread out to form one layer, and place into your hot oven. Turn the oven off and allow the granola to sit inside for about 30 minutes or until the granola has dried. If you want to add dried fruit and nuts, add them when the granola has cooled completely.
