Turkey Casserole

Summary: You need a fast meal with a lot of taste. You have a lot of leftovers and would like to use them up instead of throwing them out. This is a great recipe that uses a lot of the leftovers without having the leftover blues.

Turkey casserole can be a fun and inexpensive way to use leftovers. If you mix the casserole with some fresh ingredients the flavor and texture has a new feel about it. You do not feel like you are eating leftovers. A turkey casserole still has a feel of the feast that you cooked it for.

This easy turkey casserole makes a great dinner, has a great taste, and very little time is required. This is a great recipe to use your leftovers for most of the ingredients. If you don't have any leftovers then use the substitute that is listed next to the ingredient. This recipe also calls for some new ingredients to be added.

When it comes time to use the shredded cheese, you have a couple of options. One is to buy the cheese already shredded. The other option is to shred the cheese yourself. If shredding the cheese yourself it usually is cheaper and tastes fresher.

It will take about ten minutes to prepare the casserole and under thirty minutes to cook it.

  • 3 cups of stuffing or one package of boxed stuffing mix with a quarter cup of butter
  • one half chopped onion
  • 1 and a half teaspoons of poultry seasoning
  • 4 cups chopped cooked turkey
  • 2 cups vegetables or a 14-ounce bag of frozen vegetables thawed and drained
  • 1 can (10-3/4 ounces) condensed cream of mushroom soup
  • three-quarter cup evaporated milk
  • 1cup shredded cheese (American or mild cheddar)

Preheat your oven to 350 degrees.

Take your stuffing and set it aside. If you need to make the boxed stuffing add 1-2/3 cups hot water to the stuffing mix along with a quarter cup of butter. Stir the mixturer just until moistened, and then set aside.

Combine the soup, milk, cheese, chopped onion, and poultry seasoning in a bowl. Mix the turkey and vegetable in the casserole dish and pour the soup mixture over the turkey and vegetable. Top everything with an even layer of the stuffing that you previously set aside.

Place the casserole dish in the oven and bake twenty-five minutes or until heated throughout. Let the finished casserole sit for a few moments (about ten minutes) before serving.

This particular recipe has had people coming back for seconds. The casserole will serve about six or seven servings. If you need to extend it a bit, there are a couple of easy options. One is to add more stuffing and more vegetables with a little more cheese. Or, you can easily double everything and make two casseroles. Just remember that as you add more of one item it will change the flavor of the casserole a bit.
