Easy Chicken and Broccoli Casserole

Quick and tasty, chicken casseroles have been a favorite with cooks and families for years. One casserole that is especially tasty is one that combines the flavors of chicken with mushrooms, broccoli, and cheese. (Your kids will love this casserole, and they won't even know that they are getting a dose of vegetables!)

  • 6 chicken breasts
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1/3 cup mayonnaise
  • 1 tablespoon lemon juice
  • Grated onion to taste (optional)
  • 1 package (10 ounce) chopped broccoli, thawed and drained
  • 1 to 1 1/2 cups grated longhorn cheese
  • 1/2 cup fine bread crumbs

Cook chicken pieces by covering them in a pan with water and bringing them to a boil. Lower the heat and simmer for approximately thirty-five to forty minutes. After they are cooked, remove any skin from the chicken and cut it into bite-size pieces.

Place the chicken pieces in the bottom of a 9 x 12-inch casserole dish. Combine soups, mayonnaise, lemon juice, and onion in a mixing bowl, then pour the mixture over the chicken.

Next, spread the broccoli as third layer. Top with grated cheese followed by bread crumbs. Bake, uncovered, at 350 degrees for fifty to fifty-five minutes. Let cool for a few minutes, and then serve as the main course.
