Easy Salsa

It's time for that party and you're ready to pull out all the stops. The music is picked, the house is cleaned, the drinks are ordered, and you have most of the food ready. It's not long before your guests will start arriving and then you realize you don't have any salsa for the chips. Wanting to make this party a social highlight for all involved, you have everything homemade and the salsa should be no exception.

Here's are a couple of easy and quick salsa recipes that will have your guests begging for more!

Easy No-Cook Salsa (great for parties and for kids)

  • 2 cans (14.5 ounces each) diced tomatoes
  • 1 can (4 ounces) diced green chilies
  • 1/4 cup thinly sliced green onion
  • 1/4 cup chopped fresh parsley or cilantro
  • 2 tablespoons lemon or lime juice
  • 1/8 teaspoon pepper
  • 1 clove garlic, minced
  • 1/4 teaspoon salt, or to taste

Drain the tomatoes, reserving only 1/4 cup of the juice. Combine tomatoes and juice with remaining ingredients; cover and chill at least four hours. Serve with tortilla chips.

Makes about 2 1/2 cups.

Mexican Salsa (good for a more spicy feel)

  • 14 ounce can diced tomatoes
  • 2 scallion with greens, chopped
  • 1 tablespoon green chili peppers, chopped
  • 1/2 teaspoon salt
  • 1 teaspoon chili pepper
  • 1 fresh tomato, diced
  • 1 to 2 tablespoon hot sauce, if you like it hot

Combine all ingredients in saucepan. Bring to boil for 1 to 2 minutes. Simmer 5 minutes longer. Cool and refrigerate. It's super with tortilla chips!

Now that you have a couple of different options for your salsa making you'll be able to make amazing salsa for your special fiesta. You should serve these recipes with other food to make the spread more rounded, but chips and salsa is a great side or appetizer and is bound to spice up your party!
